This method, firstly, allows the dumplings to maintain their perfect shape,
since the dumpling skin is made of glutinous rice flour.
If boiled on high heat, the rolling hot water will flatten the dumplings or even cause them to break, with filling leaking out.
Sliding them into unsightly shapes, affecting their appearance.
Secondly, it ensures the filling cooks thoroughly.
Because the filling contains lard cubes.
If cooked for too short a time, the lard cubes inside won’t cook through or melt into lard well.
So we use warm water, slowly nurturing.
As the water in the pot was about to boil, Huang Tao added the dumplings.
