After pouring out the spinach juice, Jiang Yu set it aside, waiting for Du Guangning to use it for the dough later.
Next, he washed some tomatoes, peeled and diced them, cut the soaked wood ear mushrooms into strips, beat four eggs into a mixture, and then heated oil in a pan. He cooked these ingredients into a tomato and egg sauce, which he set aside for later use.

Jiang Yu rarely complimented Du Guangning but followed up by saying, "Go find two clean pairs of scissors, and remember, no rusty ones."

Though a bit puzzled, Du Guangning didn't have time to ask questions. He hurried out to find two pairs of scissors and handed them to Jiang Yu.
"This dish is called Scissor Noodles. Didn't you see me make the oat-fish pasta the other day? What we're going to do is use scissors to cut the dough little by little, similar to the oat-fish pasta."
Jiang Yu first tossed the scissors into boiling water to sterilize them, then handed one pair to Du Guangning, explaining,
"Don't rush; watch how I do it first, then you can follow my example."
With that, he dusted some flour on his hands to prevent the dough from sticking, kneaded the dough a few times, and finally formed it into a cone shape to make cutting easier.
Holding the coned dough in one hand and scissors in the other, he started cutting the dough into small fish shapes, little by little, while spinning it around.

With that, the Shanxi specialty Scissor Noodles was done. When served, all you need to do is mix the tomato and egg sauce with the noodle fish evenly, and it's ready to eat.
Seeing the two plates of white and green Taiji noodles, topped with red and yellow tomato and egg sauce, Du Guangning couldn't help but feel his appetite whetted, even if he wasn't particularly hungry.
He really wanted to taste the noodle fish he had cut himself!
Seeing his expression, Jiang Yu couldn't help but shake his head and chuckle. He nodded toward the side and said,
"There's plenty of noodle fish and tomato and egg sauce left over there. If you want to try some, help yourself!"
"Hey! Got it!"
Du Guangning's face lit up with joy, and he quickly grabbed a bowl, running to the side to get some Scissor Noodles.
