Gourmet: Midnight Vending-Chapter 256 - 254: Lamb Skewers, Ignited!
What is absolute high-temperature grilling?
Chen Mo stood there taking a deep breath. To be honest, he had secretly practiced a few times in the parking lot while threading the skewers in the afternoon.
This step was somewhat akin to the Fire-Burst Stir-Fry from the previous dry-fried Niu River.
Using the instant high heat of the flames, the surface of the nine-tenths cooked meat pieces is quickly caramelized at extreme speed, locking in the base flavor and freshness inside the meat.
When practicing in the afternoon, Chen Mo even called over several parking lot security guards, startling them as they thought an electric scooter had caught fire, nearly grabbing extinguishers to put it out.
Ultimately, Chen Mo appeased the guards with a large batch of meat skewers. Based on the guards’ reactions, Chen Mo’s high-temperature grilling method was certainly correct.
The long-awaited progress bar appeared again before him.
Chen Mo grabbed a large handful of skewers in each hand, roughly fifty each, grabbing almost half of the meat skewers on the grill.
The flat-lying skewers were clenched by the handle and lifted in a bunch, and on closer inspection, you could see the oil from the skewers splattering everywhere, sizzling.
"Swish! Swish! Swish!"
The following moves by Chen Mo left the diners unable to blink.
"What’s he doing?"
"Seems like he’s shaking off the oil. I noticed the small boss’s meat pieces are quite large, eating them directly would definitely be fatty."
"If he was shaking off oil, wouldn’t a few taps do the job? What’s he doing?"
"I suppose it’s a special method, usually the fancier the thing, a higher price is normal."
"But the thing is, the small boss’s skewers aren’t expensive... Aren’t we here because it’s cheap?"
In the diners’ eyes, Chen Mo was holding a large handful of skewers in each hand, with his wrists and fingers skillfully twirling, making the skewers spin continuously on the grill.
This appeared pretty useless.
After all, no matter how much you twirl it, each skewer is only slightly grilled. Wouldn’t it be better to place them down honestly and cook them?
However, what everyone failed to notice was this.
As Chen Mo continued to twirl, driven by the force of his hands, the skewers also rotated constantly.
The oil produced from the grilling of the skewers was starting to spin outward from inside and splattering around!
The speed of turning was getting faster and faster.
At first, small droplets of oil splattered, but they were blocked by the outside skewers and adhered to their surface. As the speed increased, the splattering speed of these oils also accelerated.
From droplet form, they gradually turned into smaller droplets, and then slowly became... misty!
When the speed became fast enough, the splattering oil reduced in shape, and the temperature was high enough.
"Boom!"
A wicked smile appeared on Chen Mo’s face, success!
In an instant, the skewers in Chen Mo’s hands seemed to explode, instantly igniting, causing diners to retreat in shock, exclamations of "Wow" echoed repeatedly.
Even a few health-conscious fitness coaches were already looking around for fire extinguishers.
The speed of Chen Mo’s hands did not slow down at all, instead, they got faster. Only he knew in his heart that if he stopped, the flame would immediately go out. The flame was maintained now solely because of the spinning speed and the ample oil being flung out!
"My god!"
"Is this a barbecue or a magic trick?"
"This is what real grilled skewers are about! Man, skewers grilled with fire, awesome!"
"He didn’t pour gasoline on the skewers, did he?"
Seeing nothing major had happened, diners startled by the sudden flames calmed down, yet couldn’t help but gossip.
The flames lasted a full five to six seconds as Chen Mo transferred the skewers from his left hand to his right.
Handling such a large handful of skewers with one hand was indeed a bit taxing; even Chen Mo’s hand, which could fully grasp a D-cup, found it a bit insufficient.
His right hand continued to laboriously rotate the skewers to keep the flame going as long as possible, while his left hand grabbed a large handful of cumin.
Sprinkle!
Talking about even distribution while the skewers are spinning at high speeds? Just sprinkling it on was absolutely even.
Chili powder, sprinkle!
Within the envelopment of flames, cumin and chili tightly adhered to the surface of the meat skewers. During the afternoon attempt, Chen Mo worried that sprinkling seasonings this way might lead to cumin and chili burning due to the flames.
He later realized he was purely overthinking it.
The flames, though fierce-in-appearance, were of moderate temperature essentially.
Somewhat akin to the fire-blowing acts, turning the fuel into mist allowed it to burn instantly, leaving no time for the skewers to heat up to a point where the seasonings could scorch.
As the last handful of chili powder was sprinkled on the surface of the skewers, Chen Mo finally stopped his right hand.
The flame slowly died down as everyone curiously watched.
A few seconds earlier, these skewers were of the usual grilled meat’s mature color, following Chen Mo’s final maneuver.
Now the skewer surfaces were dotted with red chili, each lamb piece coated to a true perfect golden, oily, spicy red!
The smoked aroma of charcoal fire intertwined with the tender flavor of lamb, the miraculous scent of cumin and chili fully volatilized under high heat blending in.
Gulp...
Holding a large handful of skewers in his hand, the diners audibly swallowed their saliva; no one could leave the stall hungry when faced with such an exciting flaming lamb skewer.
Chen Mo deftly divided the skewers into groups of ten, "Here, line up, each of you take ten skewers first."
Ma Juntao extended both hands, "I ordered twenty skewers!"
Chen Mo looked helplessly at this muscle-bound fellow, "I know. These skewers must be eaten while hot, they won’t taste good once they cool slightly. Can’t you eat ten first and then come back for more?"
"Sure." Ma Juntao dared not retort, fearing he might not get a single skewer, "Whatever the boss says goes."
The fitness coach and six trainees lined up like little birds eagerly waiting, each taking their skewers, scanning to pay twenty yuan, smoothly as flowing water.
Ma Juntao, while looking at the large handful of skewers in his hand, suddenly felt a sense of warmth.
"Unbelievable that I can have such affordable barbecue in Chengdu, with the boss even offering a show! How can you reason with that?"
Not sure why, but something seemed to sprung loose in him.
Ma Juntao immediately took a big bite of the meat piece’s base at the skewer, pulling his head left and hand right, stripping meat off five or six skewers straight into his mouth.
That one bite.
Just one bite.
Before Ma Juntao’s teeth could fully appreciate the slightly crispy surface, the influx of tenderness and explosion of juices instantly overwhelmed his taste buds!
The slight spiciness tingled the taste buds, cumin’s aroma roamed freely, carried with the savory salinity of the meat, bombarding inside his mouth irrationally!
"Whoa, that’s satisfying!"
The primal craving of a mammal for meat was thoroughly satisfied.
Only, Ma Juntao’s eating-with-a-smile manner was somewhat unsightly.
Song Ya, bewildered, observed her coach gulping down ten skewers in two bites, subconsciously clutching her own skewers and retreating a bit.
He wouldn’t ask me for mine, would he?
Doesn’t matter, dig in first before anything!
